Hi there, hope you're having a fantastic day today. I'm going to show you how to create moode, a unique cuisine. One of my personal favorites. This time, I'm going to do something a little different. This is going to be fantastic.

This is a Mangalorean recipe that has been passed down through generations! Idli batter is poured into molds constructed of a specific leaf variety called Kedige in Kannada stitched jackfruit leaves, or steel tumbler. These leafy molds give the idlis a distinct flavor and scent, making them truly unique and wonderful! I made this in a tumbler today.

Moode is one of the most popular recipes in the planet. It's simple, quick, and tasty. Every day, millions of people appreciate it. Moode is something I've always been interested in. They're fine and look fantastic.

Moode (woven Kewda leaves) used to make 'moode idlis'. Kewda is a fragrant leaf and oils are extracted from these leaves. It is used in the manufacture of agarbattis / incense sticks and also natural perfumes. Thus fresh kewda leaves imparts a delicate aroma to the idlis.

This steamed cooked breakfast dish when cooked in all natural containers make it more healthy and nutritious. Also no washing the idli bowls. The leaves have to be peeled while eating and the distinguishing aroma wafts to our nostrils. It's a delicacy!

Moode is a classic breakfast dish from the Mangalore coastal region of Udupi. Moodes are steaming idlies with screw pine leaves in handcrafted cylindrical cups.

Idlis (rice cakes) are without a doubt one of the healthiest breakfasts in south India. The fermented rice batter with urad dal is steamed to make the idlies. Moode's are made with the same idli batter.

Idlies are usually steamed in little steel cups. Alternatively, diverse natural leaves folded into a cylindrical cup form are used to fill idli batter, imparting their aroma to the idlies.

It's a beautiful cuisine for a healthy breakfast because of the aroma of moode with it. Gasi, a Mangalorean coconut chicken curry, goes great with the Moode.

Soft and spongy idlis are cooked in kotte which is bowl formed by joing 4 jackfruit leaves with the help pf coconut sticks.

  • 2 cups of Idli rice
  • Salt, to taste
  • Half cup of ural dal
  • Half tsp of fenugreek seed
  • Water
  • Half Puffed rice (optional)

Moode recipe step by step

  1. Separately soak the idli rice, urad dal, and fenugreek seeds for about 5 hours.
  2. The urad dal has been washed, and the idli rice water has been drained.
  3. To make a smooth and fluffy batter, grind the urad dal and fenugreek seeds together.
  4. In a mixing bowl, combine the urad dal and fenugreek seeds.
  5. After removing the urad dal batter from the bowl, grind the rice to a good thick banter as well.
  6. Pour both grinded ingredients, rice and ural dal batter together in the same bowl and mix again till well combined.
  7. Allow this batter to ferment for another 8 hours.
  8. After proper fermentation, re-mix thoroughly and, if necessary, adjust with water and salt.
  9. Fill a kedgi leaf halfway with batter and steam for 40-45 minutes.
  10. Grease a steel tumbler/bowl with coconut oil before steaming Mudda.
  11. Fill the tumbler halfway with batter.
  12. Cook for 20-25 minutes in a steamer. Remove the mudda and set it aside to cool for 5-10 minutes.
  13. Your moode should be ready.
  14. Serve with chutney, sambhar, or padhengi da ghassi.

Always wash and soak the urad for about 1 hour before you start the grinding process. It is important to soak the rice and urad separately so that you can grind the urad separately too, so do not mix them both.

If you are using beaten rice, grind it along with the rice.

If you wish you may place ramekins (individual sanna moulds/bowls) inside the steel box placed in the steamer and then position each moode mould inside each ramekin – this is to help the moode mould from toppling over.
