- 1 pound flank beef steak
- 5 scallions
- 9 tiny onions, trimmed to 6-inches in length
- 1 tablespoon kosher salt
- Water
- A quarter cup of sake
- 3 tablespoons soy sauce
- 1 teaspoon of sugar
- 1 teaspoon of vegetable oil (or canola oil)
- 1/4 cup mirin
- 1 cornstarch (optional)
- Ground or grated ginger (optional)
- Sesame seeds (optional)
- Asparagus spears

Below is a recipe for the most delicious beef negimaki. The recipe is very simple and you can prepare it in no time. Watch the video for a step-by-step preparation. This video will guide you to a delicious meal.


- Boil 2 quarts of water in a medium pot on a medium-high heat setting. Add a half-teaspoon of salt, then your scallions should be blanched for 45 minutes or until tender before removing and placed in a bowl of cold water. Drain and wipe dry the scallions on paper towels.
- Cut flank steak with the grain into desired big or medium sizes, using a cutting board. Arrange each slices 1 inch apart on plastic wrap, then cover with another piece of plastic wrap and pound slices until about 1/16 inch thick. Coat with rice flour, (optional). Place ¼ cup rice (or all-purpose) flour in a medium bowl. Toss each maki roll very lightly with rice flour, dusting off any excess.
- Arrange 3 beef slices side by side. Overlap slices slightly to form a 6-inch square. Sprinkle square lightly with salt. Then, lay 3 scallions across the meat in the direction of the grain. Tightly roll up meat around scallions and tie shut with kitchen twine at tip and where meat slices overlap. Repeat with remaining meat and scallions.
- Stir together sake, mirin, soy sauce, and sugar in a small bowl until sugar is dissolved. Put rolls in a small dish and pour marinade on them, turning to coat. Turn Marinate occasionally, while preparing the grill for 15 to 25 minutes.
- Light one chimney full of charcoal. Make sure all the charcoal is lit, pour out and spread the coals evenly over entire surface of coal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Grill rolls and reserve marinade until well seared on all sides. Taking 2 to 3 minutes per side. Transfer to a cutting board and let rest for 5 minutes.
- Pour reserved marinade into a small pot while the meat is resting. Boil over medium heat and cook until it's slightly thickened for 3 to 5 minutes. Cut off and discard twine from negimaki rolls. Cut eat roll into 6 1-inch slices. Arrange rolls on a plate and drizzle with sauce.
- Japanese beef negimaki is sliced into segments before serving
- In case of leftovers: add 1 tbspn of freshly grated ginger to the leftover soy mixture, then poured over stir fried veggies.
- Serve with rice or green salad (optional)
