  • 2 pounds pork belly, skinless
  • 3 tablespoons vegetable oil, olive oil or good-quality lard
  • 3 tablespoons taco seasoning
  • 3 garlic cloves, finely chopped
  • 6 tablespoons distilled white vinegar
  • Salt to taste
  • 2 ½ teaspoons ground guajillo, ancho or other medium-hot red chile
  • pepper
  • ½ cup broth
  • 1 teaspoon toasted, coarsely ground cumin
  • 2 tablespoons butter
  • Tomatillo salsa, for serving
  • Salsa cruda, for serving
  • Radishes, trimmed, for serving
  • Cilantro sprigs, for serving
  • Water

Below is a recipe for the most hearty buche tacos. The recipe is very simple and you can prepare it in no time. You can as well watch the video that follows later for a step-by-step preparation. This video will guide you to a delicious meal.

  1. Allow the pork belly to cool for about a minute. Place the stomach in a medium soup saucepan, cut into 1/4-inch squares.
  2. Using cold water, rinse the pork belly. In a large mixing basin, combine the pork or pork belly with 3 tablespoons white vinegar. By vigorously rubbing the creases of the pig belly against one another, wash the belly in water and vinegar. Rinse and repeat as needed.
  3. Meanwhile, start a kettle of water to boil. Boil the pre-washed pork belly for 5 minutes, or until the water turns white and hazy and scum rises to the surface. Rinse the stomachs with cold running water after removing them from the unclean water.
  4. Rub the taco seasoning on to the fatty top layer of the pork.
  5. Season the pork with salt and pepper to taste. Mix in the garlic, chili powder, and cumin with your fingers, kneading the seasoning into the meat. Allow the meat to marinade for at least an hour or overnight in the refrigerator.
  6. In a large cast iron skillet, heat the oil over medium heat. When the oil appears wavy, add the meat and cook, stirring sometimes, for 5 to 7 minutes, until lightly browned and cooked through. Remove the meat from the fire and keep it warm.
  7. Heat the tortillas on a hot griddle or cast iron pan that hasn't been oiled. Turn them once or twice until they're hot and puffy. Stack them on a cloth napkin with another napkin on top as they come off the griddle to steam.
  8. To make the tacos, place two hot tortillas on a dish and stack them together. Top with a spoonful of tomatillo salsa and another of salsa cruda, then a bit sizzled pork. Serve with radishes and cilantro sprigs as garnish.
  9. Alternatively, cut into cubes and serve with tortillas and your favorite toppings. Each tortilla contains about 1 ounce of meat. Reheated leftovers can be kept in the refrigerator for up to a week. Freeze for a longer period of time.
