  2. Knead the dough in a container, add a little water to soften (about 1/2 cup), and season to taste with salt and spices. Then mix until you have a homogenous paste that is somewhat sticky but consistent.
  3. Make a medium-thick tortilla out of a small ball of dough, then sprinkle the loroco and chopped cheese evenly across the tortilla.
  4. Close the tortilla around the filling and roll it into a ball, then pat until you have a tortilla again. Excess filling should be avoided because it will burn if exposed.
  5. Place it on a hot clay comal or on a Teflon pan that has been coated with oil. Moisten with olive oil if possible.
  6. Allow each side of the tortilla to cook, turning it over or peeling it off with a spatula to keep it from burning and sticking. It's natural for cheese to escape from the sides (just like a hot pizza)
  7. Serve with a thick tomato sauce, well-seasoned guacamole, and a sprinkling of finely diced Salvadoran-style cabbage and carrot after it's done.
