They're prepared as tender pieces of pork or beef, added to the salsa, and garnishes like shredded cabbage and crema.

The Morisqueta is a simple and traditional cuisine from Michoacán's "tierra caliente" region, namely the city of Apatzingán de la Constitución, while its origin has been assigned to the city of Parácuaro; that city, at least in colonial times, was part of the Apatzingan city. This Mexican cuisine is simple to prepare; it consists of rice topped with red salsa made with tomatoes, onions, garlic, and half-melted cheese (or grated cheese). Morisqueta can also be served with tostadas, totopos, tacos, or adobo chicken.

This dish can be made in a variety of ways, but the most basic is rice and beans with red salsa and cheese. To serve with the rice and beans, we made a simple red sauce using tomatoes, onions, and serrano peppers. We chose queso fresco as our garnishing cheese because of its tanginess, but you could use any easy-melting variety if you want. Morisqueta is one of those dishes that makes me wonder why I don't prepare it more frequently. My grandfather used to serve his morisqueta with Pork Chile Colorado, but I like Costillitas en Salsa Ranchera (pork spare ribs). However, any pork or beef dish will suffice. Shredded Beef Picadillo, Bistec Ranchero, Pork Chile Verde, and Carne de Puerco with Chile are a few of my faves. Morisqueta can also be eaten without beef. Simply top the beans and rice with your preferred salsa, mild or spicy.

Morisqueta is often eaten with white rice, but Mexican Rice works just as well in this recipe. Morisqueta is topped with Mexican crema and crumbled queso fresco to complete this delicious and enticing dish. Shredded cabbage is also a common garnish in several areas.

  • Water
  • Dried Guajillo Chiles -Stems and Seeds Removed
  • Serrano Chiles Stems and Seeds Removed
  • Dried Ancho Chiles Stems and seeds removed
  • Roma Tomatoes

Below is a recipe for the most delicious morisqueta. The recipe is very simple and you can prepare it in no time. Watch the video for a step-by-step preparation. This video will guide you to a delicious meal.

    For the sauce making:
  1. Boil the tomatoes, dried chiles, and serrano chiles to in a medium saucepan over medium-high heat. Cover and reduce heat to low.
  2. Heat for 8 to 10 minutes until tomatoes are completely cooked. Remove from heat; let cool slightly.
  3. Pour the tomatoes, dried chiles, serrano chiles and the water they were cooked in with the garlic in a blender and blend until smooth; season with salt to taste.
For Rice and beans:
  1. Pour the chicken stock, onion, and garlic in a blender and blend until smooth.
  2. Melt the butter in a medium skillet over medium-high heat.
  3. Saute the rice for 3 to 4 minutes until light golden brown.
  4. Carefully pour in the chicken broth mixture, stirring gently to combine.
  5. Season lightly with salt. Do not stir after this point.
  6. Once rice is boiled, cover and reduce heat to low. Simmer over low heat for 12 to 15 minutes or until no liquid remains and the rice has cooked completely.
  7. While the rice is simmering, heat the pinto beans in a medium saucepan.
  8. It should be ready by now
  9. To serve the morisqueta, Take a good portion of plate in the dish and top with ½ cup cooked pinto beans.
  10. Ladle 1/3 to 1/2 cup of the salsa over the rice and beans.
  11. Garnish with 2 to 3 tablespoons of crumbled queso fresco, crema, green cabbage
  12. Serve with warm tortillas or totopos (tortilla chips).
