  1. Peel and chop the Cassava, then combined with maize grains and soaked for a day.
  2. After draining the water, the cassava and maize are milled into a smooth, fine, and moist dough.
  3. The dough next undergoes fermentation. This can take anywhere from hours to days, depending on the weather.
  4. In a deep stainless steel saucepan, combine the corn dough and cassava dough.
  5. Stir constantly over a medium flame until the slurry begins to boil. Continue to mix slowly until the slurry resembles dough.
  6. Knead the dough with your wooden spatula until it is smooth. Remove any dough adhered to the sides of your pan and center your dough once it's smooth.
  7. Add enough water to almost cover the surface of the dough in the pan.
  8. Allow to boil, covered, to ensure equal cooking and steaming of the dough in the covered pan. Knead the dough with a spatula to incorporate the water until it is smooth.
  9. Re-centering, wetting, and kneading the dough until it is soft and evenly baked. Dish out a tiny bit of the banku into a bowl using a small bowl.
  10. Carry on in this manner until the banku from the deep stainless steel saucepan is completed.
  11. You can serve Banku with okro soup and fresh fish. It can also be served with soup, stew or pepper with any meat or fish of your choice.
