- In a deep stainless steel saucepan, combine the corn dough and cassava dough.
- Stir constantly over a medium flame until the slurry begins to boil. Continue to mix slowly until the slurry resembles dough.
- Knead the dough with your wooden spatula until it is smooth. Remove any dough adhered to the sides of your pan and center your dough once it's smooth.
- Add enough water to almost cover the surface of the dough in the pan.
- Allow to boil, covered, to ensure equal cooking and steaming of the dough in the covered pan. Knead the dough with a spatula to incorporate the water until it is smooth.
- Re-centering, wetting, and kneading the dough until it is soft and evenly baked. Dish out a tiny bit of the banku into a bowl using a small bowl.
