- In a pot, combine the cleaned, deveined, and deseeded chillies. Bring them to a boil in a pot of water over medium-high heat. Allow 5 minutes for the water to boil. Then turn off the heat and set aside for 10 minutes to soak.
- Combine the chilies, garlic clove, onion, oregano, thyme, whole cloves, ground black pepper, ground cumin, chicken bouillon, salt, and 3/4 cup of the soaking water in a blender. Blend until you get a thick, silky sauce.
- In a large mixing bowl, pour the sauce. To help pull all of the sauce out of the blender, use a small silicone spatula. Check for salt in the sauce. Make sure it's not deficient in salt. Allow the sauce to cool completely before using.
- In a separate bowl, combine the chicken thighs with the sauce. Make sure they're all coated in sauce. Cover the bowl and marinate for a few hours or overnight in the refrigerator.
- Using a damp cloth, clean the banana leaves. After that, cut the sheet into 10 inch wide rectangles.
- Make sure the banana leaf's smooth side is facing up. Spread a small amount of the red sauce on the banana leaf. After that, throw in a bay leaf and an avocado leaf.
- On top, place a chicken thigh. On top of the chicken, drizzle a bit extra sauce.
- Fold one of the banana leaves in half. Then there was the other side. After that, fold the ends in.
- Using the remaining chicken thighs and banana leaves, repeat the process.
- Wrap foil around the mixiotes.
- Fill a steamer pot halfway with water and add the mixiotes.
- Bring the water to a boil in the pot, then reduce to medium low and cover. 1 hour and 45 minutes of cooking time
- Serve over white rice and salsa verde for a complete meal.
