- In a big pot, place plantains (whole and unpeeled). Pour 1 cup of water into the saucepan and steam for 12-15 minutes over medium heat, or until the banana peels begin to burst open and the bananas seem cooked.
- Remove the bananas from the water and allow them to drain. Place the peelings in a large mixing dish.
- Using a potato masher, mash the plantains. Allow them to cool for at least one hour before handling the plantain mixture. Put the mashed plantains in the refrigerator to cool.
- Heat the oil to medium-low. This detail is important, because if the oil is too hot the molotes will burn quickly due to the plantain’s high sugar content.
- To make the molotes, pour about a third of a cup of the plantain mixture onto the plastic wrap and roll it out like a tortilla. Spread roughly 12 tablespoons of beans on top, then top with one stick of cheese.
- Fold the mixture in half, holding the corners of the plastic, as if you were making an empanada. Gently shape the molotes into an oblong shape using your hands.
