Chofan is a flavorful Dominican-style Chinese fried rice dish. It's a stir-fried dish of cooked rice with various items like eggs, veggies, fish, or meat that's frequently blended in a wok or frying pan. It is frequently consumed on its own or as a complement to another dish.

Chofan is also known by a number of other names. Arroz Chino, Chofan, or Chow Fan are all frequent names for this dish. Carrot, egg, peas, and bean are the main ingredients in this dish, which is usually eaten alone or with another dish such as chicken, pork, or even seafood.   • 2 chicken breasts
  • ½ lb smoked ham
  • 2 cups cooked white rice
  • 2 eggs scrambled
  • 6-8 garlic cloves mashed
  • ¼ red bell pepper
  • ¼ green bell pepper
  • 1 small onion: red or white
  • ½ tsp orégano
  • 1 carrot boiled & cubed
  • 1 tsp sopita/chicken bouillon cube
  • 2-3 tbs soy sauce
  • 2 scallions
  • Black Pepper to Taste
  • Oil
  • ¼ cup Water

Below is a simple recipe for the most hearty chofan. The recipe is very simple and you can prepare it in no time. You can as well watch the video that follows later for a step-by-step preparation. This video will guide you to a delicious meal.

  1. Cook rice in 2 cups of water with salt and oil. You can also use white rice that has been left over. Set aside the rice once it has steamed.
  2. Chicken should be diced into small-medium chunks.
  3. Season chicken with mashed garlic, Dominican or standard orégano, sopita/chicken bouillon cube, adobo, or your preferred seasoning salt. Toss in a pinch of black pepper and stir until everything is well mixed.
  4. Add olive oil to a heated deep sided skillet over medium-high heat.
  5. Mix in the seasoned chicken every now and then. You want the chicken to brown slightly but still be cooked thoroughly.
  6. Add 14 cup of water after around 5 minutes.
  7. When the water has evaporated, add the diced smoked ham and stir well.
  8. Brown the chicken and ham for about 5 minutes, or until golden brown. After that, add the onions and peppers. 1 minute of sautéing
  9. Mix in the soy sauce until everything is fully blended.
  10. Now add the cooked white rice and toss gently until the rice is completely covered in soy sauce, chicken, and ham.
  11. When the rice is completely covered, add the pre-boiled sliced carrots and stir carefully to keep the carrots intact. You can use frozen diced carrots if you like. If you do, sauté and thaw the carrots at the same time as the onions and peppers.
  12. Reduce heat to low and scramble two eggs in a separate skillet.
  13. Fold the eggs into the rice once they are thoroughly cooked.
  14. Finally, toss in the scallions and serve while still hot!
