You can also manufacture your own by mixing 1 quart of water with 2 tablespoons of salt and little less than 1/4 teaspoon potassium nitrate. You'll need vinegar, and you may add sliced onion, dried or fresh chiles, and spices like coriander and thyme to flavor your cueritos. You can also add carrot slices for a bit of sweetness and color.

- Vinegar of choice
- 2 tsp of peppercorns

- 3 small carrots
- 3 lemons
- 3 tbsp olive oil
- Salt, to taste

Below is a recipe for the most delicious cueritos. The recipe is very simple and you can prepare it in no time. Watch the video for a step-by-step preparation. This video will guide you to a delicious meal.
- Wash the pig skin thoroughly under cold running water; rinse the cueritos and place them in a bowl.
- Bring the water to a boil in a medium-sized pot over medium heat. Allow for 30 minutes of cooking time.
- Drain and discard the water, then thoroughly wash the rinds in cold water and chop them into little pieces.
- Cover the pork skins with water and return them to the pot. 2 cups vinegar, 1 tablespoon salt, 2 bay leaves, and 1 garlic clove, plus 2 bay leaves and 1 garlic clove
- Cook until the cueritos are extremely mushy in the pot over medium heat.
- Drain and discard the cooking water, then rinse the pork skins again in cold water and arrange them in a big glass jar.
- [Optional] In a sauté pan over medium heat, heat the olive oil. Combine the onions, carrots, chiles, garlic cloves, bay leaves, and peppercorns in a large mixing bowl. Cook for 2 minutes, or until the vegetables begin to soften.

- Combine the veggies and cooked pork skins in a mixing basin. Cover with cling film after adding salt and mixing well. Allow cueritos to rest for at least one night.
- Serve with crema on tostadas, and if desired, add salso Valentina or jalapeos.
