- Clean the pasta pot.
- Using a cheese grater, grate the cheese into thin shavings. In a big serving bowl where you'll toss the pasta, grind plenty of black pepper.
- In a pasta pot, boil the oil, pepper, and butter over high heat, stirring constantly, until aromatic, about 2 minutes._
- Bring 1 1/2 cups pasta cooking liquid to a boil, then reduce by half, 3–4 minutes, stirring occasionally.
- Cook pasta and 1 1/2 cups pasta cooking liquid over high heat, stirring often to help pull starch from pasta, for about 5 minutes, or until sauce thickens.
- Remove the pot from the heat and pour in 1 cup of the pasta boiling water. 3 cups Pecorino Romano, in large handfuls, until very creamy, swirling and tossing forcefully with tongs Stir in the Grana Padano, and if the pasta is dry, add additional pasta cooking liquid.
- Serve the pasta right away in a serving bowl, topped with extra grated Pecorino cheese.
