Mollejas

Mollejas simply means sweetbread in English. Mollejas (sweetbread) is a food that is made from the pancreas or thymus of a young animal. Sweetbreads are a part of the edible offal family and are used as food in many different cuisines around the world. In many different areas of the world, sweetbreads are a part of the regular diet and are served as a very rare delicacy.

Sweetbread is the thymus gland of a lamb, cow, pig, calf, or goat (the pancreas is usually added in and is considered a "double" or "triple" if so). Sweetbreads must be soaked in salt water for several hours to remove excess blood, then rinsed and soaked in fresh water for up to 24 hours to remove the salt.

Sweetbreads are no longer a part of the cuisine of many countries, but are still popular in Europe, Asia, and elsewhere. The name originates from a time when they were prepared by soaking in brine, which makes them sweet, followed by a boiling process, which is bread-like.

Sweetbread, also referred to as pancreas, is kind of an organ meat that is taken out of the center of the cow's stomach after slaughtering. It is said to be very delicate in its texture and has a sweetish taste.

It is often served in a creamy sauce, or crisp-fried. Sweetbreads are not commonly found in supermarkets, because many people are squeamish about eating body parts.

  1. Preheat the oven to 375°F (190°C).
  2. Combine the hard boiled eggs, parsley, onions, bread crumbs, melted butter, and enough liquid to make a moist stuffing in a medium mixing bowl.
  3. Dry the sweetbreads with a paper towel and cut a pocket in the middle large enough to hold the filling.
  4. Fill the cavity of the sweetbreads with the stuffing mixture after seasoning with salt and pepper.
  5. In a medium skillet with an oven-safe handle, heat the grapeseed oil.
  6. Season flour with salt and pepper in a shallow basin, then dredge sweetbreads in it, shaking off excess.
  7. Transfer sweetbreads to a heated skillet and sear each side for 3 to 4 minutes.
  8. Now, place the entire pan in the preheated oven. After about 5 minutes, check for doneness by touching the sweetbreads to see whether the interior has "tightened up" enough to stay intact when cut. When the sweetbreads have reached this point, remove them from the oven and lay them aside for about 20 minutes to allow all of the flavors to re-enter the sweetbreads and allow them to set up before slicing.
  9. In a small bowl, whisk together the tablespoon of lemon juice, a teaspoon of salt, a few grinds of pepper, and the olive oil until emulsified. Stir in the capers, celery leaves, and parsley until everything is well combined. Drizzle the sauce all around the sweetbreads on a serving platter. If desired, sprinkle with flaky salt.
