  • 1/2 cup(s) Artisan Cheddar Cheese, shredded
  • 1/4 cup(s) shallots, minced
  • 1 tablespoon garlic, minced
  • 1/4 cup(s) bourbon, optional
  • 2 tablespoon maple syrup
  • 2 tablespoon Dijon mustard
  • 3 tablespoon apple cider vinegar
  • 2 tablespoon salted butter

  1. Preheat the oven to 450°F, or the grill to medium-high if grilling.
  2. 1 jalapeo should be split into 14 strips, and 7 bacon pieces should be sliced in half.
  3. Season each quail breast with salt, then top with 1 jalapeo strip and some shredded cheese. Fold the breast in half and wrap the bacon around the entire breast. Using a skewer or toothpick, secure the skewer or toothpick. Continue wrapping until all of the breasts are covered.
  4. Bake or grill for 20 minutes on a prepared baking sheet.
  5. Meanwhile, in a skillet over medium-high heat, dice 4 to 5 slices of uncooked bacon.
  6. Cook for a few minutes to allow the fat to render and the bacon to crisp up.
  7. Add the remaining jalapeo, along with the shallots and garlic, to the bacon and finely slice it. Cook for 2 minutes, stirring once in a while.
  8. Pour in the bourbon and carefully light it on fire (with a stick lighter) to cook out the alcohol.
  9. Stir in maple syrup, mustard, and apple cider vinegar when the alcohol has boiled off. Bring to a low simmer for 1 minute, then remove from the heat and mix in the butter rapidly.
  10. Serve the sauce alongside the quail in a shallow bowl. Serve with lemon wedges and onion rings as a garnish.
