- 4-5 dried chile guajillo remove stems and seeds

Below is a simple recipe for the most hearty mole de olla. The recipe is very simple and you can prepare it in no time. You can as well watch the video that follows later for a step-by-step preparation. This video will guide you to a delicious meal.
- In a large pot, combine the water, beef shanks and chunks, salt, garlic, onion, and bay leaves, and bring to a boil for 30 minutes.
- Remove the onion and garlic after 30 minutes, then add the corn, carrots, green beans, and chayote and simmer for another 30 minutes over medium heat.
- Reduce heat slightly after it reaches a boil. Some foam may be visible, which can be removed with a wooden spoon. As needed, skim the froth from the top. It will take 2-2 1/2 hours for the beef to become soft. Warm a pot of water on the back burner. As the beef cooks down, add more water.
- Cook for another 20 minutes, or until the steak is cooked, adding the potatoes, squash, mint leaves, and cabbage.
- Fill another saucepan partly with water and heat to medium for the sauce. Bring the tomatoes, garlic, and chiles to a boil, then reduce the heat and cook for another 10-12 minutes. Then turn off the heat. Half of the cooking water should be drained from the chiles and tomatoes before putting them in the blender jar. Toss in a sprinkle of oregano and season with salt and pepper to taste. Blend on high speed until completely smooth.
- Pour everything into the chile sauce you've produced above. Raise the heat to a low-medium simmer. Cook, stirring occasionally, for 12-15 minutes, or until carrots (chayotes) are fork tender.
- Serve immediately with lime wedges and tortillas.
