- 2 teaspoons yellow mustard seeds
- 4 cloves garlic, minced

- Soak the chillies for a few minutes in a dish of boiling water.
- Remove the chilies and drain after about an hour, then set the water aside. After that, cut the chilies and put them to the mixer. Pour in a small amount of the water that was previously used to soak the chiles.
- Sauté the garlic, hot pepper, shallot, and mustard seed in the oil in a small skillet until the garlic and shallots brown and the mustard seeds explode (ideal over high heat, but don't burn the oil).
- Combine the tomato juice, tamari, white pepper, and cumin in a mixing bowl.
- Reduce the heat to low and cook for 5 minutes.
- Mix 2 tablespoons cold water and cornstarch in a small cup until smooth.
- Stir continuously into the sauce.
- In a minute or two, the sauce should thicken.
- Take it off the heat and whisk it into your favorite dish.
