Zacahuil - Veracruzanos Tamales

Zacahuil is a meal from the Huasteca region, which includes the states of San Luis Potosi, Veracruz, and Hidalgo. Shortcrust pastry, lard, Chinese chili, rattlesnake, and pig or turkey are all used in the same way in all three states.

It's a dish that combines a number of Mesoamerican culinary methods, including the use of nixtamal, the production of moles or sauces for the filling, and cooking underground with firewood and hot stones. Because it is the largest tamale meal ever created, zacahuil is known in Mexico as "the Tamale of Tamales" or "Party Tamale." It's typically saved for large social events and celebrations.

These tamales are massive, measuring up to 5 feet long and weighing up to 50 pounds. The masa used to make tortillas differs from that used to make tamales. Masa for tamales is coarser, and so is the masa for Zacahuil. In fact, the masa for this behemoth is considerably coarser, almost granulated. Zacahuil is an ancient ethnic meal that dates back hundreds of years before the advent of the Spanish in Mexico. Ground corn, a variety of dried chili peppers (such as guajillo, ancho, and cascabel), chicken or pork or both, salt, as well as spicy sauce are all used in the basic recipe. In some parts of Mexico, zacahuil is made with seafood. The tamale is wrapped in banana or papatla leaves, knotted, and baked overnight in an adobe bake oven for 8 to 12 hours.

  • 1 dried chipotle chile pepper
  • Vegetable oil
  • 2 tablespoon all-purpose flour
  • chicken broth
  • 1/4 cup canned fire-roasted crushed tomatoes
  • 2 tablespoons chopped fennel leaves
  • 2 cups finely chopped cooked turkey
  • 1/2 cup lard
  • 1 teaspoon baking powder
  • 2 cups masa harina
  • 1/4 cup ground blanched almonds
  • Banana leaves
  • Salt

Below is a simple recipe for the most hearty zacahuil. The recipe is very simple and you can prepare it in no time. You can as well watch the video that follows later for a step-by-step preparation. This video will guide you to a delicious meal.

  1. Zacahuil Filling: Toast ancho and chipotle chile peppers in an oiled medium skillet over medium heat for 4 to 5 minutes, or until fragrant, tossing regularly. Allow to cool.
  2. Remove the peppers' stems, seeds, and membranes. Chop the peppers into smaller pieces. Pepper pieces should be ground in a spice grinder or a clean coffee grinder. Cover and pulse until the mixture is finely ground. Remove from the equation.
  3. Heat the vegetable oil in the same skillet over medium heat. Add flour to the oil and heat, stirring constantly, until the mixture is light brown. Cook and stir over medium heat until the broth and tomatoes are blended. Add the fennel leaves or hoja santa. Combine the turkey and ground chile peppers in a mixing bowl. Remove from the equation.
  4. Zacahuil Dough: In a large mixing bowl, beat the lard and baking powder on medium speed for about 2 minutes, or until smooth. Combine masa harina, almonds, and salt in a medium mixing basin. In a separate bowl, whisk the masa mixture and broth together until the mixture resembles a thick creamy paste.
  5. Assembling Zacahuil: To make each tamale, distribute about 2 tablespoons of tamale dough in the center of a 4x3-inch banana leaf rectangle, so the long sides of the dough run lengthwise on the banana leaf. 1 spoonful of the filling should be poured along the center of the dough rectangle. Roll up layers by bringing a long edge of the banana leaf over to the opposite side of the filling. (If the banana leaves split, squeeze the pieces together to keep them together.) Twist or tuck the ends of the leaves under. Banana leaf strips or 100 percent cotton kitchen string can be used to tie twisted ends.
  6. To steam tamales, place them in a large tamale pot upright in a steamer basket. Fill the space between the tamales rather than packing them too tightly. In the bottom of the pan, pour at least 1 1/2 inches of water. Bring to a boil and then cover. Reduce the heat to a medium-low setting. Steam for 45-60 minutes, or until the dough has pulled away from the banana leaves and is spongy and cooked through.
  7. Transfer the zacahuil tamales to a serving plate to serve. Before eating, carefully unfold the tamales. Serve with salsa if desired.
