  1. Remove any dirt or bad maize kernels from the hominy and place it in a large mixing basin. Then drain the hominy after rinsing it with water.
  2. Fill it halfway with water and leave it to soak at room temperature overnight.
  3. Drain the hominy the next day and place it in a boiling saucepan. The size of the pot is determined by the amount of corn to be cooked.
  4. Fill the pot with enough water to cover the hominy by about 1 inch (2,5 cm).
  5. Then, on high heat, cover the saucepan and bring the water to a boil.
  6. Reduce the heat to medium low and cook for about 2 hours, or until the hominy is soft.
  7. Every 20 minutes, check the water level and add more if you think it's required.
  8. When the hominy is done, pour it into a bowl and top with milk, grated panela, and guava paste.
